dinner, day 13:
leftover meatloaf & leftover vegetable, mushroom, & wild rice soup.
it was a long day & a lot of driving, & seeing as i was in no condition to go grocery shopping, cook, or clean, i was VERY happy i had some great tasting leftovers waiting for me in the fridge.
day 12.

lunch: leftover braised vegetables w/ pork.
snack: whole wheat pitas & roasted garlic feta dip from whole foods market.

breakfast: whole grain cream of wheat made w/ vanilla almond breeze & topped w/ cinnamon & brown sugar.
it was supposed to be oatmeal, but yuck, & i’ve made breakfast couscous a lot lately. figured i’d mix it up. i am grateful for all these warm breakfasts lately, though.

i’m not gonna lie. i was definitely omnomnomredmeatdrool tonight. it’s weird, i don’t even eat that much red meat to begin with, but it seemed so exciting tonight after a week and a half of mostly vegetarian eating.
i did use organic grass-fed beef, though. i pureed some garlic, onion, spinach, & an egg in the food processor. i mixed that in a bowl w/ some ground beef &...
sigh...
so i thought i’d do the right thing & leave the rest of those evil cookies with my family in sofla.
but i missed them. they were sooooogood! and i eat so healthy all day, i just want a little treat at night… (especially this week of the month.)
so i just whipped up a half batch. i made them with whole wheat flour this time, so we’ll see how that comes out. at least this...

breakfast was supposed to be granola w/ yogurt & mixed berries, but not only is yogurt one of the few foods i dislike to eat (on its own), i had volunteering early that morning as well. so i had some coffee & a clementine before i left, & brought some granola to snack on while i was there.

dinner, day 3:
pecan-encrusted tofu with a rosemary & porcini cream sauce over garlic mashed potatoes, with steamed broccoli.
sounds good doesn’t it? bet you wish you could see a picture of it, don’t you? me, too.
unfortunately, there was a 40 minute wait at the top, so we asked for first available, which ended up being the bar side, which is VERY dimly lit. we’re talking candlelight....

i am heading to gainesville tonight for a friend’s art opening, so tonight will be the first time i dine out on this diet. i’ve decided that while i will mostly stick to the main food matters guidelines, tonight will also be be part treat.

breakfats day 3:
breakfast coucous with roasted vegetables.
i’m actually glad bittman enjoys a savory breakfast as much as i do. the breakfast burrito might take some getting used to, but this dish hit the spot. it was made using the leftover couscous & roasted vegetables from last night, & it ended up tasting like fancy home fries, with all the starchy roasted veggies & onion.
dessert, day 2:
kettle corn.
the dessert was supposed to be orange wedges, but i didn’t see that when i had oranges for breakfast, & i wanted something different. bittman loves his popcorn, so i thought i’d dress it up for dessert. i make this kettle corn often, & it is completely inhaled in this house every time i do.
