key lime ice cream pie

notice the order of the words there. it was my fiance’s birthday, & one of his favorite desserts is key lime pie…. which i don’t like. i figured it would be a bit much for the bday boy to consume most of a whole pie by himself, but seeing as i received a new ice cream maker for christmas, this seemed like a great compromise! it was super easy, as it was basically making ice cream & pouring it into a pie crust. all bday guests raved & said it tasted just like a key lime pie. enjoy!

Ingredients
- 1 2/3 cups sugar, divided
- 1 2/3 cups heavy cream
- 1 cup whole milk
- 1 teaspoon vanilla extract
- 6 large egg yolks
- 1 teaspoon lime or Key lime zest
- 1 1/4 cups fresh or bottled Key lime juice
- 1 extra large pre-made graham pie crust (or feel free to make your own!)
- Garnishes: lime zest, whipped cream
Preparation
1. Combine 1 cup sugar and next 3 ingredients in a large saucepan. Bring to just under a boil over med-high heat. Immediately remove from heat.
2. Beat egg yolks in a large bowl. Slowly whisk 1 cup warm cream mixture into egg yolks to temper them. Add egg mixture to remaining cream mixture, whisking constantly.
3. Cook cream mixture over medium heat, stirring regularly, 5 minutes or until mixture coats the back of a spoon. Remove from heat; pour through a fine wire-mesh strainer into a bowl. Cool custard completely, for at least 2 hours.
4. Combine remaining 2/3 cup sugar and zest and juice in a bowl, stirring until sugar dissolves. Stir lime juice mixture into cooled custard. Transfer custard to an ice cream maker, and process according to manufacturer’s directions.
5. Mound ice cream into prepared crust. Freeze pie 3-4 hours or overnight. Garnish slices with dollops of whipped cream & a sprinkle of lime zest, if desired.
